Human-toothed structure bandit. The classic cold-month inshore target.

Archosargus probatocephalus · Also known as: Convict fish, sheepies. Ideal water temp 58–68°F.

Habitat & structure

Anything vertical with barnacles: bridge and dock pilings, jetties, seawalls, channel markers, oyster reefs. Late winter they gather on nearshore reefs and at passes to spawn.

Where they’re biting

Panama City & St. Andrew Bay — Bridge pilings and the pass jetties, Dec–Mar.
Apalachicola Bay — Oyster bars and channel markers.
Galveston Bay — Jetty rocks and pier pilings all winter.
Chesapeake Bay (Annapolis & Lower Bay) — CBBT-style structure fish; lower bay, summer into fall.

Weather, light & cloud cover

Clear, slower-moving water makes the subtle bite easier to detect. Slack-ish tide windows around structure are workable; heavy current makes them hug pilings tighter.

Proven for sheepshead

Soft Shrimp Imitation (DOA-style) — Soft plastic · spring / summer / fall / winter. Do almost nothing — drift it with the current like a real shrimp. Deadly under lights at night.
Sheepshead Jig 1/8–1/4 oz, Shrimp-Tipped — Jig · winter / spring / fall. Vertical along pilings. Watch the line — the bite is a tick. Set hard; their mouth is armor.
Free-Lined Live Shrimp — Live bait · spring / summer / fall / winter. When fish are pressured and picky, nothing beats a naked shrimp drifting naturally past structure.
Fiddler Crabs — Natural bait · winter / spring. The sheepshead bait. Drop it tight to the piling — a foot away might as well be a mile.
Sand Fleas (Mole Crabs) on Surf Rig — Natural bait · spring / fall / summer. Rake them from the swash at your feet. In CA, a single sand crab on light line is the corbina game.
Squid Strips on Dropper Rig — Natural bait · spring / summer / fall / winter. The tough, stay-on-the-hook option for piers and party boats. In Monterey, whole squid soaked at night calls white seabass.
